What you are looking at

Thin, wide and close to the house
A patio carries a lot of surface area over ground that moves, and it sits right against the structure it is serving. That combination is why base preparation, thickness, reinforcement and joint placement matter more here than the finish does - and why the slope is set to carry water away from the foundation rather than pond against it.
Pool decks are wet by design
A pool surround is the one slab that is supposed to get wet, so the surface texture is doing real work: it has to stay grippy under bare feet while shedding water away from both the pool and the house. That is why you will see broom and textured finishes around water rather than smooth ones.
